A less bodgy way of changing restricted config options in Jitsi
Add this to docker-compose.override.yml:
services:
jitfree:
image: drmaxnix/jitfree:1
restart: unless-stopped
volumes:
- ${CONFIG}/web:/config:Z

- LINUX_IMMUTABLE
networks:
meet.jitsi:

$ docker compose up -d
Note
The `LINUX_IMMUTABLE` capability is required to activate the immutable flag on the jitsi config file after it has been modified by JitFree. This is necessary to protect it from being overwritten by Jitsi (see DrMaxNix/jitfree#1).
Now you can add lines like these to .env:

# Remove 'Jitsi' watermark
# Note that all of JitFree's options are prefixed with `JITFREE_`!
JITFREE_SHOW_JITSI_WATERMARK=false
# Override the default 'Jitsi Meet' app name
# Note that you are in charge of formatting the values as proper javascript!
